Thai-style Lettuce Cups

Trying to lose weight can be hard sometimes especially when the others in your household thinks that diet food is tasteless and leaves you wanting more.

These Thai-style lettuce cups however are not just low-carb, low fat and full of nutrients but they are also easy to make and incredibly tasty and satisfying.

This recipe serves two people for a quick after work dinner using the larger lettuce leaves or it can serve four as an appetiser at your next dinner party.

INGREDIENTS

500g low-fat turkey mince
1 heaped teaspoon ginger cut finely
1 clove garlic, crushed
2 shallots finely chopped
1/2 cup of coriander finely chopped
1 tsp lemon grass
splash of soy sauce
splash fish sauce
splash sesame oil
splash rice wine/cooking sherry

TO SERVE
2 little gem lettuces
coriander
chili paste

METHOD

Mix the turkey with all the ingredients and let sit for 2 hours.

Separate the leaves of the gem lettuces and wash. Pat dry to ensure there is no excess moisture. Arrange on a plate.

Fry the turkey in a non-stick pan on a high heat breaking up the turkey as it cooks.

Spoon the turkey into the lettuce leaves and garnish with chilli and coriander to taste.

Serve immediately.
