Spike Your BBQ With Flavour

Warm weather means al fresco dining is de rigueur for any fashion conscious female, and we like nothing  better than putting our style skills to good use and creating some fabulous creations to impress our friends! But if you need a little inspiration, Chambord, the versatile black raspberry liqueur, is the perfect summer ingredient, not just for your picnic or barbecue drinks but your food too!

Chambord has created a delicious summer recipe for the most stylish garden party.  So glam up the BBQ with this culinary recipes to impress your friends this summer.

The Chambord Angus Burger

Who said burgers had to be manly?  Try this gourmet twist on the classic Angus burger

Ingredients:
2 ¼ lb Ground Angus Beef

3tbsp Ketchup

1 ½ tbsp Dijon Mustard

1 ½ tbsp Fresh parsley, chopped

¾ tsp Ground black pepper

Chambord-Glazed Red Onions

4tbs Butter

3 cups Red onions, sliced into half moons, 1/16 inch thick

2 tbsp White wine

¾ tsp Kosher salt

½ cup Chicken stock

¼ cup Chambord Liqueur

2 tsb Red Wine Vinegar

1 tsp Ketchup

¼ tsp Fresh thyme, chopped

¼ tsp Ground black pepper

Method:
To prepare the ground meat for the burger, combine the ground Angus beef, ketchup, Dijon mustard, chopped parsley, salt and black pepper together in a bowl and mix thoroughly and refrigerate.

To make the Chambord-Glazed Red Onions, melt the butter in a heavy-bottom saucepan. Add the sliced onions and cook until very lightly browned. Add the white wine and salt and continue cooking until the wine is nearly evaporated. Then add the chicken stock, Chambord Liqueur, vinegar, ketchup, chopped thyme, and black pepper. Cook over low heat until the onions are soft and tender (about 15 minutes). Remove from heat and allow to cool.

To prepare the hamburgers, divide ground meat into 6 balls of equal size. Make a well in the centre of each ball and fill with 1 ½ tbsp of the Chambord-Glazed Red Onions. Carefully form the meat around the well to enclose the onions in the centre of each ball. Slightly flatten and form into ovals. Please note that the burgers may fall apart during cooking if shaped into traditional flat hamburger patties. Place burgers on a preheated grill over medium heat until an internal temperature of 70 °C, or cook on the barbecue for a sumptuous outdoor treat.

Glass: Champagne Flute
Ingredients:
10ml Chambord
Champagne

Raspberry for garnish

Method:
Pour a splash (10ml) of Chambord into a champagne flute, top with your favourite champagne and add a succulent raspberry for decoration.
